This, is weird I’ve never heard of.
As I’m into studying so many cook books and chefs I came across this which I’m not too sure about…

It’s shrimp ceviche.
Not cooked as usual with heat, but in citric juices.

Then I looked it up further and came upon this…

Food Safety: Acid "curing" firms up and changes the color of the shrimp, but unlike heat, acid does not kill all harmful bacteria or parasites. If you are worried about food safety, it is safer to lightly poach the shrimp in hot water first, then let them cool and marinate in the citrus juices for flavor.
