I have some carrots in the fridge. Also bulb of garlic.
Bought:
2 swedes, not too big
1 turnip
1 big white onion
a few small mushrooms (the fruiting body of a fungus living underground)
1parsnip
Some leeks (I know, not strictly a root veg)
Some celery ditto
Quarter cabbage, REALLY not a root veg, just to bulk out the stew
1 yellow capsicum—just for the color
1 potato
Piece ginger
Bunch flat leaf parsley, will chop up the stems finely, leaves can be a garnish
S&P.
If I had really been thinking I would have bought vege stock while at the vege shop. Chicken it will have to be. ISAAC

Dunno yet about spices, 6 cardamom pods might be nice or a star or two of star anise plus cinnamon stick.
Fry the onion-garlic-ginger-parsley-chili (likely, is one in the fridge) and add to the braiser. Chop up the veges one at a time, fry at high heat, into the braiser. Add stock, maybe a teacup “Bruny Bitter” red Ale? (Then what to do with the rest of that beer???)
Be OK I reckon, eat some now, freeze the rest.
