That's easier said than done. A struggling offender resists their arms being bent at the elbow, and kicks violently with their feet. Maybe a taser would have done the trick, press the electrodes on the skin and keep the trigger held on. They shouldn't fool around on an aircraft when it's in the air, there's too much at risk

What was the cost to the Airline flying back to Melbourne?, heaps! The flight was essentially canceled due to that insane loudmouth chick. She cruelled herself for any future booking with Jetstar I'll bet

I notice she was given the 'under the jaw' pressure point restraint by the off-duty security or steward. That would have dulled her senses with pain.

Ohh come on - she is a woman -
there would have been plenty of able bodied men who would've pitched in
and helped to hold her down while they restrained her with cable ties.
Then she could have been gagged to shut her up -
and the flight continued on.  Smiley

US mother sentenced to life in prison (without the possibility of parole) after leaving toddler alone while she went on holiday

When she arrived home after her 10 day holiday, she called 911 because her child "wasn't breathing"

Sounds like she was suffering from "Darwin's theory of Evolution" Syndrome ... perhaps reckoning that had her daughter been strong enough, she would have survived the 10 day ordeal

This woman must be detained in a mental health unit for an indefinite
period—if not jail.

I think Jetstar did the right thing by returning to Melbourne to at least
let the passengers relax and unwind after the incident.  It could've been
extremely disconcerting for many of them who had an inherent  fear of
flying even from their onboarding. 

People just don't need this sort of bullshit at 35,000 feet.
