Gordy's Asian Drumsticks

I passed by my favorite chicken providore today and saw some of the most incredible free range drumsticks so it inspired me for dinner.

Ingredients
Drumsticks as required
Light soy sauce (bought from my Asian grocer)
Tamarind paste (bought from my Sri Lankan grocer)
Garlic
Ginger
Olive oil
Lime juice (from Gordy's garden)
Kaffir lime leaf (from Gordy's garden)
Thai Jasmin Rice (bought from my Asian grocer)
Ground black Kampot pepper (bought from my Asian grocer)

Method
Mix a teaspoon of tamarind paste, 5 tablespoons of soy, juice of 2 limes and a slug of oil into a bowl then add the pepper, chopped garlic, ginger and shredded lime leaf.

Preheat Weber Q to 200deg and place drum sticks on the grill
With a spoon drizzle the sauce over the chicken
Reduce heat to 1/4 (about 125deg)
Drizzle more sauce about every 5 mins.
When chicken is about 3/4 cooked, turn heat up to full and when it hits over 200deg based with a little olive oil (to crisp the chicken)

Serve on bed of steamed jasmine rice

Note: If you prefer to make a more Indian fusion style, serve on a bed of basmati rice.

Standard is flour, garlic, coriander, pepper, soy and fish sauce.

This was from Thailand last year.

The scaffolding is getting moved to the back where my outdooor entertaining area is on Tuesday, so hopefully it's all done by Christmas.

Roast chicken was actually the trad Christmas meal when I was a kid.
I just find that nobody really likes turkey that much, at least not as much as the bother it takes to prepare. We get some really high quality free range chooks and do them slow roasted Heston style.
