well done, Mechanic. My husband also likes to bake and we are starting to cook together. Ill upload a pic of the profiteroles he is going to teach me when we have a day off.

the mrs likes cooking with me too... so on a sunday arvo we'll make soups and a stew for the week... and lately, a cake... I like making everything from scratch and all fresh..

without artificial colours or preservatives... Smiley

Made [url=http://www .24kitchen. nl/recepten/gemberkoek]gemberkoek[/url] on Sunday. Needs long slow cooking to rise then a shorter hotter bake to set and brown the cake. My newish oven (mid 2013) let me down by going out during the hour at 120°C. I also hadn’t bought enough candied ginger, substituted some crystalised ginger, half in the cake, half to make a bit of ginger syrup to keep the mix moist and light.

Still ended up very good, will try this again this weekend: will wrap brown paper around the loaf tin, like you do with fruitcake and put it on a heavy baking tray then set the oven to 140°C and check it frequently!

Sponge cakes don’t interest me.

Will post my recipe and a recipe for broodschotel in my board, probably on the weekend.

Busy making marmalade. Kinda hell on the ss hip but there you go.

Good, glad I could help you with good advice. I have the Kenwood Major Titanium mixer with the 1400W motor but that is overkill for whisking a bit of cream or an egg white or two  Smiley

Panforte. In spite of all the other recipes that are out there, I use a recipe from Margaret Fulton:

Devotees of panforte, the traditional nut and fruit cake of Sienna, Italy, say this recipe is the real thing – it is rich and spicy, as it should be. Small individual ones make wonderful gifts.

INGREDIENTS
250g      blanched almonds
250g      blanched hazelnuts
310g      caster sugar
310g      honey
2 cups plain flour
1 tablespoon ground cinnamon
1 teaspoon mixed spice
750g      dried mixed fruits, using a mixture of currants, raisins and mixed peel
icing sugar, to dust
METHOD

Preheat the oven to 180°C. Lay the almonds and hazelnuts on a baking tray and toast in the oven until golden. Melt the sugar and honey together in a heavy-based saucepan over a gentle heat, then allow to boil until it reaches a temperature of 115°C on a sugar thermometer. Alternatively, test a little mixture in cold water; it should not disintegrate but flatten of its own accord when picked up with the fingers.
Meanwhile, sift the flour and spices into a large bowl and add the toasted nuts and dried fruit.
When the syrup has reached temperature, pour into the bowl and mix quickly and thoroughly together. Tip into 2 × 25 cm cake tins or a tin 28 × 38 cm and 2.5 cm deep (or a little larger than this) which have been lined with baking paper. Pat the mixture into the tins using hands that have been dipped in water.
Bake in a 160°C oven for 45 minutes. Dust liberally with icing sugar and store in airtight containers. Cut into wedges or rectangles to serve.


I add 150g or so of glace ginger to the dried fruit but stick pretty much to the recipe.  It's usually ready in about 35 minutes.

I was so busy doing the frozen Christmas pudding and organising finger food for my son's birthday today that I forgot to make a birthday cake   Cheesy

I remembered at 5pm and had to rush out and buy one.  Actually I bought two small ones.  I didn't make them but I can't wait to try a small piece.


Hazelnut chocolate torte and a small St Honore gateau.  Tried posting pics but it isn't working.  Oh well.
