calves - they're Bobby calves - & not all bull calves or unwanted heifers are euthanised.
They are typically sent to slaughter for veal or processed meat or raised for beef. Many dairy farmers use beef bulls over their cows to increase the usability & saleability for these calves.
Friesian(the most popular dairy breed) steers make good beef.
As for carbon footprints - none as big as that left by the clearing for windmill & solar farms.
