When I had the Jovial Monk home brew shop I created a Pack for a Christmas Ale “big, strong, spiced and fruity like a Christmas pudding!”

A 3Kg part mash, pale and, obviously, some darker malts. Strength about 7% but “top it up to 17L to make it stronger.” I suggested a double spice addition, cassia (not real cinnamon”) cloves etc at 15 minutes before flame out and at flame out.

Yeast and hop choice to give fruitiness to the ale.

Quite a pricy Pack plus a can of liquid malt extract and the spices but it was popular enough. So much I was asked for this Pack in September! Told them not to make it too strong and to take it easy on the spices—not enough time for the spices to mellow and the alcohol heat to disappear.

Not sure what gave me the idea.

I had made a spiced lager that was really nice. One of the nice things about that lager—the spice flavor changed over time with cinnamon (from the cassia, NEVER add real cinnamon to the beer!) gradually becoming the main part of the flavor.

We never made or ate much Christmas pudding, not a Dutch thing, so hard to think why I thought of it.
