Planned to make this today to take tomorrow.

Looked at recipe: 150g borlotti beans soaked 12 hours. Oops—forgot to do that! So simmering them now then will let them steep until needed.

Cutting up the pancetta, then 3 onions, simmer that in my big Le Creuset frypan/braiser to start the soup. Homemade chicken stock finishing thawing. LOT of veges to dice!

OMG!

All done bar fishing out the spuds and mashing them. Shoulders on fire after dicing slicing a loooooong list of veges.

Took one shortcut: did not blanch and peel the tomatoes, so sue me!

bet it will be deelish!

Once the spuds have been mashed will taste and season. Might add salt in the form of anchovies, they do enrich soups and stews. Bring chopped parsley and grated Parmigiano Reggiano to the fun run tomorrow.

Will take 3L of soup to the lure coursing fun run. Might still make the anzac biscuits. Maybe not.
