Making lamingtons! Even messier!

I made up gluten free flour, then all the rest of making lamingtons.
What a sticky chocolaty coconuty job!
Chocolate everywhere!
But OMG after 2 hours it’s a taste sensation!
I spread my own home made blackberry jam between layers.

You know… if I ever win a big lotto … first thing I want… my own chef! With a European flair. Grin

Lamingtons too messy.

Anyone have a great recipe for finger buns? Bakeries (well, in Tas) don’t seem to make them anymore yet a coconut icing buttered finger bun is a nice snack on long drives etc.

I cheekily could not resist had one for breakfast instead of my usual toast and Vegemite! Even better day after when flavours enhance.
And this song came to mind  Smiley

I detest 'dry' lamingtons. But very moist ones are delicious.
