"Everyone's" self interest is an oxymoron, since each has his own self-interest which may or may not coincide with Universal Rights, as identified in the UN UDHR.
In short, the right to work under acceptable conditions, without threat of war.
How about the right to self defence against unlawful aggression?

A brief history of "rights" for you; individuals have possessed the right to self-defence since the beginning of time, based on the survival
instinct of individuals, formerly expressed as 'an eye for an eye' (before Jesus said 'turn the other cheek', implicit in the Sermon on the Mount: "blessed are the peace makers").
Which explains why this is the ONE right you want discuss above all other rights, thereby rendering inoperable the concept of universal rights.
The UN UDHR is concerned with identifying rights belonging to all by virtue of being human.

So a black man from a desperately-low socio-economic economic background is apprehended for stealing goods from a supermarket: he abuses the security guards, they wrestle him to the ground.

Cause of death (not examined by a coroner, of course): poverty entrenched by an evil economic system based on "free" individuals competing in "free" markets - which demonstrably entrenches socio-economic disadvantage, violating Article 23 of the UN UDHR.
Even Trump is railing against the present system: "the world is raping the US"(!).
And you - with your 'individual rights" delusions, want to stick your nose into an ideological dispute in China re Taiwan which is a Chinese province - a dispute which is now causing Trump to upend the world trading system, so he can "save the free world".
So - re the 'right to self defence': it's a given and doesn't require listing among the universal rights of mankind, rights which require social organization based on more than self-interest, if men are to advance beyond the chaotic social relations which are threatening our very existence in a globalized world.i
