Penny wants to remove Chinese sanctions on beef when we're paying $70 per kilo.

Back in the 90s when I had a cat I used to buy her a big lump
of porterhouse steak from the market
for $6 and feed her that for 3 or 4 days.
She loved it – prime beef for her tummy.
Now humans buy less quality meat for a lot more money.
Go figure?

One serve of steak is $25.

Was at a bulk butcher today—prime cuts $35–40/Kg.

Bought a nice pork belly, lambs fry, marrow bones (turning into stock right now) plus frozen chicken necks and chicken livers for Socks.

Beef cheeks, used to be cheap, selling for $$$ now.

Offal is still cheap and can be very nice (I exclude tripe from that.)

Soon I want to buy fresh chicken livers and make pate.

Just turned the heat off under the stock. Tastes and smells byootifool!

Some will be turned into vermouth jus. A jus is richer than a gravy and employs no thickening agent. IMHO gravy sucks. I LOATH flour used as thickening agent: it is like a blanket covering (up) the flavor.

I added some peppercorns but NO SALT to my stock (never do.) So when I concentrate the stock it won’t turn into brine! And making a jus involves concentration.

Needed to put the stock into jars or icecream containers or something.

No lidded icecream containers. Found four yoghurt “buckets” but no lids. Oh dear, oh goodness, what to do?

Had some large ziplock bags. Cleaned the yoghurt buckets, put a ziplock bag in then filled bag with stock, reduced air space in the bag, closed it. Three bags in the freezer.

One bag will become a batch of vermouth jus. Going to make that soon, trial batch anyway as well as cook the nice bit of pork belly I also bought.

In a week or two will make larger batches of both for a dinner party I will host next month.

Hmmm pork belly, rich jus—think a nice crispy vinegary salad might be a suitable accompaniment. Something light for desert—icecream?

Might make pho beef soup with one part of the stock I made or maybe save the white stock and use the brown stock (made from bones roasted in the oven.)

Hmm need brisket, meaty bones and marrow bones to make the stock—next Sunday.

Will need to dig through my spices which are not organised at all right now. Where can I find beansprouts? Hmmm see if Chinese shop in Launceston or the Indian/Sri Lankan place are open.
