Why not be your own butcher?

It's OK with half a sheep.
Our family used to buy that when I was a teenager and I'd cut it up using:
a hacksaw, a meat axe and a carving knife
into all the correct cuts as per a colour diagram they gave you.
Then it would be frozen in our chest deep freezer.
It certainly was a lot cheaper than buying the individual cuts in a supermarket.
Families should do that nowadays to save money.

Because I do not need a ton of meat.

I live by myself.

I have cut WAY down on red meat as I have stated several times: a way to avoid or delay and minimise dementia. At my age that is common sense.

A lump of 2Kg of porterhouse steak that I cut up myself does me for some time. Occasionally I will buy spare ribs or chicken thighs etc to eat instead of steak. I do buy really nice salami, prosciutto, bacon, duck eggs etc etc.

I have a chunk of chuck steak—will turn that into beef rendang, freeze most of it or maybe pressure can it. Need a bigger freezer!

The other bulk butcher I have found has large pieces, whole loins, porterhouse etc, costing like $150–250 and some time I will buy one, cut it up myself, live like a king once a week. Buy a brisket, ribs, wings and fill my smoker and have a party. Going to plant a metric buttload of sweet corn and freeze a heap
