The mint looks great.
My neighbours would agree with you. Just like my chokos ...... growing everywhere!
Forgot to mention that my Greek neighbour a few doors down who is country born n bred (originally from Sparta and came to Australia in 1985) has a gripe about growing mint. She can't grow mint anywhere on her property lol!
She gets the shytes when she comes up my garden pathway. It's growing out of all the cracks in the concrete lol. Luscious big soft leaves too!
These days I deliberately grow it as ground cover all around my front garden (so she and a few other neighbours can pick what they like). Mint comes in handy for cold drinks and salads as well as soups/stews. Oh and Mediterraneans need lots of it for a popular dip involving creamy thick yoghurt/shredded cucumber and chopped up garlic.
Sometimes it's just a matter of position. You plant something in an ideal position and it just thrives.
I also like it in tabbouleh (tabouli). Pain to make but so good.
Just had some home made mint Sause on my vegies for a change.
Mint once grew like that for me too but not anymore. I will keep trying I may have to try growing in pots - oh the shame. Had an area where it just grew wild till a few years ago now nothing. Have 1 small sick looking mint plant left in a different area.
Grandmother had a waterfront place with sandy soil that was always damp (more like wet) near the fence. Put some Mint there and it just took over the whole 200 meter fence line. We were providing mint for just about the whole community. People there still ask if I remember all the free mint, they have no idea that I grew it.

Tsatsiki is the Mediterranean dip I make from scratch using thick Greek yoghurt and shredded cucumber and chopped up mint and chopped up garlic.
Served chilled. Yummy.
Tabouli salad is the healthiest salad in the world IMO. You need LOTS of fresh herbs esp parsley.
I make that salad in these proportions:
4 cups of chopped up parsley
1 cup of chopped up mint
1 cup of chopped up dill
1 cup of chopped up coriander
2 cups of chopped up tomatoes
1 cup chopped up green onions
lemon juice
salt
extra virgin olive oil
• when I usually make this salad I also make fish cakes or felafel patties.
