The ones taken to the moon were set up for the dayside of the moon, which is extremely bright, so they had short exposure times to avoid oversaturating the camera as a result relatively dim stars don't show up. In the SOHO pics they aren't looking at the brightness of a daytime moon, so the exposure times are longer and thus the stars show up.

Its actually very basic photography.
