Heh, this is a much more lively and interesting board since I complained BO just copied and pasted crap videos.

She didn’t like my constructive criticism—it WAS constructive, honest—but now no more c&p (get enough of that from Booby and YouLiar) and more freewheeling discussion.

Now we just need a mod to keep it humming along.

There's absolutely nothing wrong with the Food forum you silly whining old woman.  People get new ideas from books and/or video clips.

When you can put on a better performance than you do on your own one man/woman board or can Mod a sub-forum with less histrionics than you did with Fermentations by all means put yourself forward.

Until then,  keep your continued negativity to yourself.

Try working on your own very flawed personality and think deeply about why you don't get on with anyone.   Here's a hint.  It isn't them!

It's about so much more than the content of carbon which is usually around 1%. There's the molybdenum, chromium, nickel, and with vg10 cobalt. All add properties to the steel. Then there is the "curing" of the steel, the tempering. It's not all about the carbon content although plain old carbon steel makes fine knives there are many factors in play. Car leaf springs make great knives if treated properly. A saw blade can make an excellent filleting knife.


Plain carbon steel makes an excellent blade but its propensity to rust requires a lot of care.

edit: I'm not sure plain carbon steel knives are allowed to be used in commercial kitchens anymore. The rusting and pitting that results are a harbour for bacteria.



If you hold the end of the handle between two finger-nails of the left-hand and flick the blade it should ring / sing / ding like an old Australian One Crown silver coin.

Yes, we should maintain our, how do you say? Je ne sais quoi? Mieux vaut prévenir que guérir. N'est ce pa? Or we could just arrange to make her happy. Grin Is the oven pre-heated? Perhaps get her to slide down the banister. A warm breakfast is a wonderful thing.

I apologise Herb, I shouldn't talk about your niece like that. She's still welcome to roast my meat though.

I have another kneef coming from Japan, it's been sent. They make incredible knives. Not sure how I can show what they cut like here. Any ideas?

edit: No I won't circumcise myself.
edit2: Or behead an infidel.
