Chicken and sweetcorn soup (Read 3024 times)

Chicken and sweetcorn soup

Did it last week, not sure if it was good but i liked it
One carrot
one onion
Some frozen corn
can of creamed corn (edghill not chinese crap)
can of chickpeas
one head of broccoli sliced off into tiny shavings
snow peas chopped in half
Green tabasco sauce
one pack of boneless chicken thighs.
tiny bit of red lentils

Into the pressure cooker about 30 minutes

It lasted me for quite a few meals.

I did not bother with egg white, garlic or spring onion.


Anyone got some other food suggestions for throwing into the mix?

Sounds good, I normally don't bother with half the stuff you used but consider the egg and spring onion to be important.

I also use chicken with the bones included and cook it slowly till the meat falls off of the bones. I feel that the bones in the mix produce a superior broth.

Yeah I am just a bit lazy for the egg and Cowtown had no spring onion today.

I thought I had broken some ancient rule putting the carrot in, but it needed the colour, plus they are cheap and healthy

I am too lazy for the bone to,, I recon the chickpeas made up for that.

I think they are exceptional in the mix,, I put the liquid from the can in as well.

Never tried carrot but it all sounds very good.

I just went o make it,,, no broccoli

I did have a few extra snow peas so my green requirement should still be ok.

I also put quite a bit of chopped up celery.

Will find out tonight if its any good.

I can never seem to make the same thing twice , because I dont measure or make sure I have the same ingredients all the time.

I have to admit I like parsely in all soup.. and m y daughter in law uses chives in pumpkin soup which makes a nice change...

when I make chicken soup I like spinach in it...mind you thats for the cure all chicken soup...

plus a bit of rice if you are making it a meal...or barley

heaps of celery..

Well that recipe up their worked a treat.

It just had enough heat from red and green tabasco to leave a pleasant taste.

I had to clean all my utensils with  lemon juice, just in case there was (always is) some nasty bugs from the raw chicken,,, since I am keeping some back in the fridge

it freezes well....not for long though as I fin d chicken gets tough if frozen a long time..

best to make the soup using bones if you can.. and freeze it and do the chicken on day of eating..or buy the ready cooked from the takeaway if you have a good one...woollies here do a nice ready cooked chicken its nice and moist not cooked to death...


I made gnocchi for my grandson tonight never made it before...not a rousing success.. he gave a me a 6 [aka MKR].. plus 2 more when we added the parmesan chse...lol...which I forgot..I have the kitchen from hell right now and its being left until the morning..

wont be doing it again...

Delaware is good nadine is useless.

Potato and labels one of my deep burning aggravations

Poor shoppers never know what rubbish they are buying

I know and they claim they have lost a lot this year because of floods...so god only knows what we are paying for..nothing under $4 a kilo here..I got the ones with dirt on them...I wont be trying it again too much work for too little..

The cheeky bastards even label a line as "low Carb" potato.

Nadine crops like a pig, even a clown grower can get 80 tonnes per Ha,,, trouble is a lot of that 80 tonne is just water

Good potato get nothing like that yeald
