Lazy man's preserved peaches

Eating fresh peaches all year round is easy. You won't get them from the supermarket because most of the time they come out of cold storage.
And tins etc are not usually much good. They are either cooked green or they are like a mush.

Now this is easy, if you are prepared to find an orchard and buy in season.

Boil a water/sugar mixture. Enough water to just cover your peeled & chopped up peaches when they're ready and maybe a half cup of sugar.. Alberta peaches, the old favourite bottling peach, are best. They don't call them that now but there is something equivalent.

Let the water/sugar mixture sit for a little while and then put the peaches in. Bring back up to a simmer, turn off and pour them off into storage containers to suit. Note you are not cooking the peaches, you are virtually just blanching them for a minute or two.

When they're cool you can freeze them and you've got fresh peaches any time you want.

my nana used to do a lot of preserving...

we'd help her clean out the glass jars, steel lids and they had like a square red oring seal...

the lids also had spring clips attached to the top of them...

she had the biggest plum tree that I've ever seen, still do this day... the plums would be about  an inch to an inch 1/2 round... and there'd be thousand of them..
