Last night I made an easy meal:

Italian style pork sausages slowly cooked for 30 minutes,
with plenty of steak tomato sauce,
Basmati rice with Soy sauce,
green olives,
a Blue banner pickled onion.
It all tasted so yummy.

Marinate with apple cider vinegar and thinly sliced onions for 5 hours -

sear both sides at high temperature then cook slowly for 3 minutes per side.   Smiley

This baby is 2 inches thick so needs a reverse sear. It's going in a low temp air-fryer on roast mode for 45 mins, then on a super hot cast iron griddle.

This came out a little more cooked than I inteended (I need to upgrade my meat thermometer) Some of the edge pieces were cooked thru but lucky wife likes those. Some were closer to rare which I like so we all got something exactly how we liked it.

It went in the airfryer for 30 mins on about 120c until the internal temp was 52c, rested for 5 then into a ridiculously hot griddle. I cut off a piece of the fat first and rendered it down for frying so I had a high smoke point, and it was in the pan for about 90 seconds per side.

That steak was only $50. We were all stuffed. $50 buys you nothing in a restaurant these day.

Then serve with Dijon mustard and cucumber?

Yep. In Sydney & Melbourne, you get a big plate of nothing burger boutique style and culture.
I get my Venison for free. Pay very little for Roo.
Pay normal for soft Camel brought down from the north.
Pay a lot for the odd Buffalo from N.T. But its delicious.
If weather is too bad for spearing my own fish, then I buy direct from local Fishing Process place at good price.

I had some left over chips from the fish and chips I bought last night.
When the chips are fried up the next day they come out nice and crispy.

I went to the fridge and grabbed whatever and made myself a nice lunch.
It was very tasty indeed.    Smiley

I didn't make much for dinner.  I just had some chicken.  I taste tested some Apple Crumble Muffins I made to take to my son's tomorrow though.  Yum!

Here you go, Bobby.

This is an actual photo of what I've just made.

...

It's Chilli Garlic Prawns on a bed of Chana Dal, topped off with fresh spring onions and red chilli.

I made everything from scratch.

It tasted amazing!
