I had been looking at my little holly hobby cook book I wrote recipes in since the 1970s and decided to do some older recipes I used to do.
So, stuffed capsicums tonight but vegetarian because daughter is visiting so I will do the minced meat next time  Smiley
But gee it was healthy and filling! Brown med grain rice is so yum!
Maybe I should’ve left it a bit longer so cheese grilled more but it was still good.

Mmmm, my wife used to make vegetarian stuffed capsicums with brown rice.

Nice capsicums Sophia.

Tonight I had roast chicken and spuds with gravy.
It was quite nice.
