I do eat a lot of vege meals these days, trying to include leafy greens as much as possible, ward off or delay and reduce dementia: Mum was diagnosed with dementia when she was only 10 years older than I am now. But I like to have steak or something really really meaty once a week. Salami, bresaola, prosciutto, pancetta and bacon give enough meaty flavor to let me go through the week without withdrawal symptoms  Grin Grin Grin

Tomorrow will make my first go at the pork belly and vermouth jus.

Both are on the go.

Made a couple mistakes, nevermind I will eat pork and jus no probs.

I AM glad I bought the extra, small bit of pork belly to have a practice run. No matter what stuff ups I make, it will all go down the cakehole no problems.

The second lot, when I have several guests will be MUCH better than this Version 1.

Hmm someone is bringing me a near 400g porterhouse steak!

Will cut that in two, enjoy tonight and tomorrow! Go and buy some veges to enjoy with the steak. Will make oven cooked sweet potato wedges for one!

Home made garlic prawns on a bed of rice & rocket tonight, I think (with a nice NZ SB).

Or maybe the prawns and fresh garlic with some broccolini and rice, if I don't have any rocket.

Mmm, now I'm hungry.

Pizza tomorrow, three little pizzas:

1. Conventional pepperoni/tomato/olive

Two less conventional:

2. Simple tomato and herb—coriander, fennel bulb, garlic

3. Bacon and onion


I have bocconcini and Romano cheeses.

Will post more detailed recipes tomorrow.

Suddenly remembered I had to make the dough for my pizzas!

250g flour the main component. In percentage terms:

100% flour
65% water
1% salt
1.2% yeast

All components weighed.
