Last night -
I had some Drovers Choice Beef Rump Steak | 230g
$7.00
$30.43 per 1kg

I made it into a curry with onions and a bit of tomato sauce and some
flour to thicken it at the end.
I simmered it for only 35 minutes and it was super tender - beautiful -
best curried beef I've had in ages.

yes - I do that sometimes  -
I know that you should use the cheapest cut for a curry but then you have to simmer it for 2 to 3 hours
for it to be tender enough -
and I wonder how much goodness is cooked out of it by then?

The cuts you simmer have connective tissue that becomes lovely and gelatinous. Also spices need some simmering to remove their rawness.

Yeah—I get mine from a proper butcher or from the bulk butcher whi supplies good meat at excellent prices. When I get my chest freezer empty will see about buying a quarter cow for bigger savings.

OK - what cut of beef do you use for a curry and how long do you simmer it for?

Note: - the onions used with the beef are acidic and help to tenderise the meat.

Yes - considerable savings.

When I was young - say 14  to 16 -
I cut up half a sheep many times into regular cuts using a chart as a guide -
and it was put down into our freezer.
It's not an easy job -
I used a hacksaw with a new blade - a knife and a meat axe.
I don't think many people could do it and you do need a large freezer.

I can buy 2Kg rump or porterhouse for $20/Kg. That is plenty—I eat more veg and white meat now due to age and preventing dementia. Worked with Mum. But like a steak once a week so $20/Kg is fine. Buy steak get bones for Socks, lamb shanks etc free. But for families or those eating lots of red meat, yeah buy a whole or half cow or sheep or pig.

Hmm nearly May—will start hassling the bulk butcher for a pig head for stock for pea soup.
