Leg of lamb tonight seasoned with garlic and rosemary,  one day late for Australia Day.  Roast tatas crispy on the outside and nice and fluffy on the inside and vegies (yuck)

That's how it's done but once in the colander I let them cool.  If you shake them around in the pan, to rough them up, whilst they are still hot they can get a bit mushy around the edges.

Using a mix of olive oil and butter to roast them in gives them a better crisp too.

Wife's making prawn and avocado rice paper rolls. That's all good, but I'm having a lump of bbq charred meat with mine.

I make the best crunchy roast potatoes, taught by my Mother and no pre-cooking involved.

Melt lard in baking tray then place roast (beef, lamb or chicken) on a rack in the baking tray. Cook at 200C or whatever for 20 minutes a pound or whatever. Calculate when the meat is to be ready and place potatoes in the "lard" and allow 45 minutes, turning once. Wonderful baked potatoes ... I usually peel and cut them in halves.  Plus I use BUTTER to serve with pepper and salt (as my Mother did) ... yum, yum.

Potatoes (un-peeled) can also be wrapped in alfoil and cooked for 45 minutes and served topped with sour cream, chives etc.

Chips need VERY hot oil and you can cut them as chips or "wedges" and if you have the right electric chip thingie ... better chips than you get at Greasy Joes and certainly better than the frozen ones you stick in the oven.

I reckon one of those air fryers would make wicked chips, planning to buy the Tefal one just because it is made in France and not in bloody china! It does need a bit of oil but that’s OK.

The French and the Germans as well make great appliances.

I have seen some great stuff in Holland as well but they may have been German made.

I worked in QBranch of Dept Defence for a while.

A regular and frequent incident we had to deal with was fires in married quarters—invariably the chip pan caused the fire. Think I will stick to my little deepfryer until I get the Tefal airfryer.

To go with a fermenter of plum mel, 10 jars passata, 6 jars preserved peaches and 11 jars of brandied plums. . .well, go have a look in Fermentations  Wink

got one.. they are a little bit noisy..

I got the double one that you can also cook meat in as well... dual timers for different times depending on what you are cooking..

but I'd had a guts full of oil laden fat chips...

so now we dry fry them.. they are pretty good..

Hey Mechanic I will need some Weber Q advice shortly.  I have been too busy to buy the additional bits and pieces for it yet.  It's still in its box in my kitchen.

Tonight we are having lasagne, mixed leaf salad and Hungarian parmesan bread.  Smells good too.

Anyone seen True Blue?

tonight was baked chicken wings in white wine and olive oil, coated with mixed herbs from the garden,  accompanied with baked rosemary and olive oil potatoes and a green salad. Yummy

the simple things are often the best
