What temp indicates camel meat is properly cooked?

Cooked a camel fillet on Sunday in my offset smoker. Cooked it for longer than the wild boar ribs because it was much thicker than the ribs.

Sliced the fillet up yesterday—looked very pink, so I fried the slices with some onion & garlic.

My meat thermometer does not mention “camel.”  Grin Grin Grin

Anybody know?

They seem to target 72’C. - Rare

Stuff the cooked lamb with stuffed chickens.

Add more rice.

Stuff the camel with the stuffed lamb and add rest of rice.

Broil over large charcoal pit until brown.

Spread any remaining rice on large tray and place camel on top of rice.

Decorate with boiled eggs and nuts.

Serves a friendly crowd of 80-100.
