Depends how you cook it. There’s no way I’d eat wild pig rare, in fact even medium rare can be risky.
The best wild pig I ever had was cooked very slowly overnight in a wood fired oven.
Even beef can be risky, Anyone who enjoys steak tartare is taking a real risk. 




You make a roast in the oven from say a leg of wild pork.
Cook it on low for 2.5 to 3 hours.
Be ready for the cooking smell to go through the
whole house even with an extractor fan on.

I recall the time we had a hangi was at a sports get together at the hockey grounds. Basically, it was just a wild boar getting cooked for some considerable time (as it does) before we were served up the meat for our burgers. Some old fart looking after dispensing the meat decided to be a real bogan arsehole towards myself -- a 10 year old boy -- and gave me a piece of the pork that just so happen to be the rotting part of the boar. I had a few bites of the burger before I found the rotten part of the burger. Then I had to tell Mum about the "yucky" meat. She had a sniff of the meat and agreed with me about it being sickening.
I asked the guy for some more meat for the burger we had. He acted like I was too well fed and told me to eat what I had. Mum told him that the meat was no good. It was only her intervention that got the old fart to change out the meat for something better.
I ended up being sick in the coming days. Everyone else enjoyed their burgers because they did not get the part that had rotted. If you want to deal with a feral pig problem in Australia, you might do well not to abuse children and then give them the spoiled part of the animal you have cooked up. But, that old fart looked like he was a jack-in-the-box scare away from dying. So, I do not care now.

The best wild boar I have ever eaten was at Copenhagen a few years ago.

It was magnificent, tender, juicy and amazing to taste..

Likewise, the salmon the next night ( baked) was some of the best salmon I have ever eaten as well.

But they had no idea how to make a quick hamburger, their fried eggs were half cooked and their scrambled eggs were far too peppered.

But I'll always remember that wild boar and salmon.

If you consider the logistics of doing this it doesn't point to an illegal release. 20 feral pigs would have to be trapped then transported on a truck which locals would take license plate number and report if they saw it driving down any road. There weren't many feral pigs around before our 1996 gun laws people were out there with semi autos reducing the numbers.

Our increase with feral pig numbers is a result of our 1996 gun laws we can thank John Howard for this increase.
