Mrs G makes sauerkraut all the time in screw top mason jars and leaves it to me to remember to burp them (one was forgotten about and turned into a cabbage IED).

Finally got one of these.

Best Sauerkraut I've had so far was at the German-Bohemian restaurant in Narellan, western Sydney. Also where the meals are pretty full-on and filling for the price compared to many others.

Nah, I know it's not hard but a bit more planning required. Plus I can get pot-set greek yoghurt for like 10% more than the cost of the of milk itself so not much incentive.

The whole point of making Sauerkraut is to get it unpasteurised, which is hard to buy.

I'm going to have a bash at making mozzarella at some stage.

Most of the lactic acid bacteria in raw sauerkraut are killed by the pool of hydrochloric acid that is the human stomach. To help the intestinal flora eat whole meal/whole grain bread.
