has anyone cooked a ham in pastry

I google it and all I get is quiche  I had it a few years ago  very nice  but didnt get the recipe....not sure of the pasty was salt or not but we didnt eat the pastry...but the ham was delish!..

I think it would have to be an old recipe.

no not what I had ... I am almost sure it was a salt pastry....one you dont eat....but the ham was beautiful..

Oh no you don't ... I'm not plastering myself in pastry ... last time I followed the cooking instructions I had severe burns on my feet for weeks.

It said: Open can and stand in boiling water.

thats greg I did try that link but I have to sign a declaration giving them permission to share my  data to other countries.. I dont want to do that....

Ham for special occasions baked from raw in a salt dough to retain moistness, then basted with a honey orange glaze.

Ingredients
Serves: 12
5kg (12lb) raw smoked or unsmoked ham
1.2kg flour
800g salt
120ml orange juice
2 tablespoons honey
1 tablespoon whole cloves


Method

Prep:1hr  ›  Cook:5hr  ›  Extra time:1hr  ›  Ready in:7hr
Remove hock so ham is a nice rounded shape. If traditionally cured, soak in fresh water overnight in a cool place.
Preheat the oven to 180 C / Gas 4.
Mix together flour and salt and add enough water to make into a stiff dough. Roll out 1/3 and place ham on top. Roll out remaining dough and totally encase the ham, dampening edges to ensure a good seal. Place in large roasting dish.
Bake the ham for 40 minutes per kg (20 minutes per pound). If its a very big ham, drop the time (it's rare to need more than 5 hours). If very small, add 30 minutes extra.
Remove ham from oven and carefully crack case open (I use a small hatchet), being very careful not to burn yourself on the case or the steam. The skin should come off with the case. If the skin doesn't come off easily, ham isn't cooked.
Transfer ham to a clean roasting dish and score fat diagonally. Place cloves in points of diamonds. Mix together honey, orange juice and about 1/4 cup juice for cooking. Baste well.
Cook ham for another 30 minutes, basting frequently until golden brown. Leave to cool for 30 minutes before eating.

Other ideas
Discard cooled case in rubbish. Do not compost due to high salt content.

That's just a routine cookies declaration, implemented (and worded) a little differently.

Nothing to worry about.

thanks for that greg... its sounds about right....

I am presuming a smoked ham is as good as anything....

I dont know if we can buy raw ham here can we????>..

if its for sure a normal smoked ham will suffice I might have a go...

has anyone done this before?...


I trust you wont start getting mail from Nigeria now..
