Pink is good  - if the steak turns grey inside it's ruined.
It would be tough & not juicy.

But the rules of Restaurant cooking compared to home cooking is ...'time'.

Restaurants just don't have the time to cook meat like one can at home.

I've learned that the longer I can cook meat: Low and Slow - the more chance its gonna be a delicious marsh-mellow experience of juicy tasty meat.
It doesn't have to be rare - it can be well done.

But in Restaurants - they don't have the time (hours!) to cook meat low and slow, so this is where the alternative version of 'rare' to soften, etc compared to well done.
