I agree. The better quality the meat the rarer it should be.

But the rules of Restaurant cooking compared to home cooking is ...'time'.

Restaurants just don't have the time to cook meat like one can at home.

I've learned that the longer I can cook meat: Low and Slow - the more chance its gonna be a delicious marsh-mellow experience of juicy tasty meat.
It doesn't have to be rare - it can be well done.

But in Restaurants - they don't have the time (hours!) to cook meat low and slow, so this is where the alternative version of 'rare' to soften, etc compared to well done.

high quality steak doesn't need to be cooked for a long time.
You just sear each side - at high temperature -  then turn the heat down for a
few minutes each side.
Only tough, low quality meat has to be cooked slowly.

Also - top restaurants have access to a higher quality of steak than that available
at most butchers or supermarkets.

agree Bobby-this is how i do mine-but i dont eat steak/red meat anymore-ever eaten Kobe/wagyu beef?  I havent
