Love dark chocolate but can only eat it sparingly now, like cheese.

me too- but i do love cheese- my fave is most likely swiss and brie this week- changes all the time- not really into strong smelly cheese although they are great for cooking- and none of that blue  vein cheese either- horrible stuff

I do like Stilton but only occasionally.
Brie & Camembert, various Cheddars especially, the stronger the better, especially Epicure.
Don't like Greek or goat cheeses.

I like dark chocolate with a minimum of sugar and no palm oil. I do not see the point of paying for a bar of dried milk, sugar and palm or coconut oil. It is better to pay more, but to buy real chocolate.

Chocolate - since it was invented - has always been roasted (the beans). It didnt have milk added to it until later (I forget) so was always dark chocolate until modern chocolate. I used to get some pure cocoa and make hot chocolate with it without milk and it was really good. Cant get it anymore though because the chocolate manufacturers found a way to save money by not roasting the cocoa beans. Raw cacao. Seriously the rule is supposed to be that if its called cacao its raw and if its cocoa its cooked. Raw cacao is really bad for your liver. Theres some kind of enzymes in there that the roasting gets rid of. It also doesnt taste as good (instinct?). I am sad that you cant get real chocolate anymore.
