under the rules of the Fraternal Order of Cheesemongers, not to allow your cheese to.come to room temperature before eating.

Unfortunately, except maybe for southern Taswegians, we live in a climate where we have to refrigerate cheese and we don't have nice.cold larders to store it.

I am guilty as charged. If I want a sandwich I grabthe cheese out of the fridge.
But if II'm going to eat some cheese after a meal I try to remember to plate it for a good while.
Otherwise you are just not getting the.flavour.

boges    me thinks those rules go back to the days when cheese was REAL  you went to the dairy and bought a wedge off the wheel   and had a thick rind on the outside....it actually smelt like cheese....

now its all wrapped in plastic...probably matured for two weeks...no class at all...

we are paying a lot of money for crap...eat it before it goes mildewed... and enjoy
