Nothing beats home made bread, especially for toast.

As the ads used to say, "you can taste the goodness"

I don't experiment with all the fancy options on the breadmaker. I'm flat out handling the instructions for your basic white.
But I have found that olive oil (a light or mild variety, Aldi has a good one) makes for better texture imo than butter.

My bread maker lives in the garage now.  Too many gadgets.

I used to set it so that the bread was done when we woke up in the morning and waking up to the smell of freshly baked bread is definitely worth it.  YUM YUM

It's great on the day you bake it but thereafter makes for awesome toast.

The day before yesterday I had a surfeit of home made wholemeal bread and, boy, did my digestion let me know about it yesterday.
My eyes have always been bigger than my stomach (and other parts of me)

did you eat it hot.....we used to be able to buy fresh made from the oven when I was growing up   in those dark old days before automation....ahhhh memories..

the crust on bread then was amazing.

When I was really little we used to get it delivered and it was still warm.  I was allowed to go out front and get the bread and could never resist sticking my fingers through that awesome crust and into the warm dough.

the only thing we had delivered was milk by horse and cart..... oh and the mail of course...lol...you were very spoilt here in OZ.

bread is one of my downfalls... mostly sourdough..

and no I dont need  Smiley to make home made.....thank you the less the better...... Sad Sad

Nowhere can I find appropriate seeds to make a wholegrain loaf. (I will eat it in moderation, and wash it down with more wine)

I made a rye loaf with caraway seeds last night. You used to be able to buy them years ago but not seen them in a long time. There was a wholesale baker that supplied delis when they still existed, Sebels I think it might have been called.

I had enough trouble finding a small packet of rye flour at a reasonable price. But 1 kg should make 5 loaves maybe because you use more plain & wholemeal flour than rye in the mixture.
Next time I'll add more brown sugar as well as the molasses. It needs to be a little bit more sweet.

I slice it up & freeze it. Only have a bit occasionally. Nice with parma ham & a soft cheese.

I like Rye bread too.   Love Sourdough, as well, but mainly for toast or garlic bread.

And last night, would you believe, I made a café style loaf of raisin toast.
This is dead easy. Just follow the recipes in the book that came with the machine.
I may never have to go anywhere anymore.

Since last posting here I've mainly been making the same standard white loaf. It always works, makes the best toast I've ever had and I'm eating less bread.
But I think I want to vary the taste a bit but don't quite know in what way.
The texture is fine as it is, I wouldn't want to do anything that would change that.
Maybe it could be a tad more fluffy, for want of a better word, but that's a different texture isn't it.
Maybe the yeast content should be a tad higher, what would that do?
Maybe it could be a little sweeter, more sugar?
Maybe the milk powder should be increased a bit, what would that do?
Decisions Decisions!
