There is blue Stilton as well as white Stilton.

The blue is the most popular one.

Nothing better than blue cheese.

Eaten on crackers, in mashed potato, in a sauce over broccolini.   Mmm     Smiley

Castello is particularly nice.

I love a mild blue cheese, what they call Gorgonzola dolce which isn’t gorgonzola. Anybody wanting to try a blue vein cheese look for Gorgonzola dolce.

Dolce means sweet or mild.

I ate Roquefort in Paris (from a supermarket, didn’t know the cremery was only open in the morning  Smiley  and that was nice but dunno if it is for sale here—it is made from unpasteurised milk and there is way too much official fuss about that.

I did drink unhomogenised and unpasteurised Paris Creek Dairy milk while it was available. One of my employees was a bit horrified but I said we weren’t living in Dickensian times and brucellosis and TB weren’t in the herds anymore, we had refrigeration etc.

But some officious prick in the Health Dept stopped the sale of unpasteurised milk so now I drink pasteurised unhomogenised Paris Creek milk. The more things are done to the milk the less nutritious it is.

I used to eat white and blue Castello.

Suddenly remembered that. There was a cheese stall that handled it. I guess they dropped the Castello after a while, maybe after a change of ownership. It isn’t a cheese stall anymore.

There is now a “Smelly Cheese” stall at the Central Market. Imported cheeses, mostly French and all $$$. Sell some great French butter that I buy when I am going to bake some butter-heavy dish (Boterkoek, Breton flat cake, zandkoekjes.) They also sell tubs of cream from guernsey cows, rich and yellow, utterly delicious—I have to really ration myself to one or two a year.

we used to have King Island Tasmanian cream here in woollies   but its gone   it was delish.. always had it Xmas day   maybe they dont do cream anymore   what a shame......as soon as I find something I am prepared to pay extra for because its worth it.. it disappears on me.. Sad Sad Sad

King Island make some great cheese, will definitely visit once I am settled in Tassie. Some nice yoghurt too,

I have asked if they still sell their cream—used to buy that.

Can’t wait to visit the Salamanca Market! I drove quite a distance to visit the Launceston Market when I was in Tassy this April then visited a few wineries on the way back—the Tamar Valley is a lovely place.
