Some easy Greek food recipes

Marinating your barbecue chops.

The amounts below are for 3 kg of chops, work it out from there for your measure.

Throw all your chops (usually lamb) but anything (red meat or even pork) chops would be ok, into a big bowl.

Sprinkle with olive oil, don't be shy wet them and throw in a couple of big chopped up brown onions, these make you cry.... Smiley

There should be many strands of onion on each chop once they are wet so you have to cut the onions fine.

Then you can throw in a stubby or can of beer.

Then sprinkle with salt, paprika, pepper and two cloves of finely crushed garlic and oregano.

Mix everything with your clean hands thoroughly.

Then cover with glad wrap and place in fridge over night.

Next day you'll have the tastiest chops in town.... Grin

Tsitsiki - Yogurt garlic sauce

You better watch out it gives you an appetite so your going to eat more than usual and get fat.

In the big container show below (2kg), adjust your measure from there.

Before you start, get a clean tea towel and in a container or pot empty the yogurt into the tea towel, hang this tea towel with the yogurt in it for about 30 minutes to an hour to rinse of the excess water. Depends on the yogurt.

The yogurt shown below is not that watery so 20 to 30 minutes in the tea towel will be fine to drain fluids.

When  the yogurt is ready place in its final serving bowel, then throw in the following on top,

1. Throw in about 40ml of olive oil into 2kg of yogurt.

2. Squish and finely chop 4 cloves of garlic and place them in bowel.

3. Fine grate some cucumber and add to bowel, one Lebanese cucumber, there not that big, for 2kg of yogurt.

4. A touch of salt, a flat tea spoon and squeeze half a lemon into the bowl.

5. Then thoroughly mix all ingredients together with wooden stirrer.

6. Glad wrap bowl and leave in the fridge for 2 hours and then serve.

Goes with red meat dishes as you would put a mash potato in with steak and peas.

OR

It's great for dips before the main course.

Baked beans Greek style.

Cut up one whole brown onion (small pieces) and place it in a casserole with about 50ml of olive oil.

Place casserole over fire and fry the onion and olive oil for about 2 minutes or until it simmers then,

While on the fire add 2 cloves of crushed garlic stir for about 5 seconds with wooden stirrer then add one cup of black eyed beans, add salt and pepper with 3 or 4 table spoons of tomato paste and stir for a minute.

Then add two litres of water and the following cut into small bite size pieces.

a. 1 carrot

b. chopped celery (1 stalk)

Then cook for about 90 minutes approximately.

Eaten with bread and dodoni feta goes with this food usually a piece in a plate beside you.

Warning will flush your digestive system.

Black eyed beans

A bit of dill or parsley on top doesn't go astray especially for presentation, but its not mixed in the main as are the other ingredients.

BTW folks the recipes above and below this post are not gourmet chef style Greek food or fast food.

It's the knowledge that my mum and dad and my wife's mum and dad brought over with them.

This is general knowledge for most of the oldies, there maybe some slight variation here or there, but it is general knowledge amongst that age group.

So you could say its old fashion country  style.

Doubt you'll be able to google these but then again you never know.

Anyway enjoy if you want to try it.

Lentils Greek style, exactly the same as the baked beans with a few variations.

Cut up one whole brown onion (small pieces) and place it in a casserole with about 50ml of olive oil.

I did say easy but ok I will do it for you BO, from a cook book called Greek Cuisine by Sophia Skoyra & Fitrakis.

KATAIFI
...

Main ingredients

1 1/4 kg of Kataifi filo
4 cups of crushed armonds
1 1/2 cups butter
1 tea spoon cinnamon
2 eggs
4 table spoons sugar

For the syrup

1 1/2kg sugar - Book  (wife says 1kg good enough)
5 cups of water
1 lemon rind
1 tea spoon of lemon

Instructions

1. Soak the almonds in boiler water to remove the skin, then put them in the food processor and crush them thick not too thin. Then put them in a bowl and mix with sugar, cinnamon and the eggs.

2a. Take a little bit of kataifi filo pulling it lightly with your fingers to open it up, open on a wooden board in the shape of a rectangle with the width roughly the width of the finished kataifi.

2b. If you open up the whole kataifi filo making a big square or rectangle then put the mixture to one side and roll, then cut into size pieces required, easier I guess.

3. On one of the smaller sides of the kataifi filo place a table spoon of the almond mixture and roll this filo into a cylinder, roll tight at first so the filo contains the ingredients. Do this until all the filo and almonds have been used, you should have many pieces. see 2b above.

4. Place these pieces in a buttered tray. Melt some butter and pour one table spoon on each of these cylindrical pieces.

5. Place this tray in oven and cook for 30 minutes at about 180C.

6. While they're cooking get the syrup ready by mixing the water and the sugar and then boiling with the lemon rind for about 5 to 10 minutes, then add the juice of the lemon and boil for another 2 to 3 minutes, boil until the syrup is not too runny.

7. As soon as the kataifi comes out of the oven pour the syrup over the cylindrical pieces.

8. Cover the tray with the kataifi on it with a tea towel and let the kataifi soak up the syrup until it cools right down.

NOTE!
Don't let the cylindrical pieces touch each other or they will not cook on the sides, leave a small space between them on the tray or they become too soggy.

Same here, I'm a sweet tooth but do find the Greek sweets too sweet.

BTW in the book it was 1.5 kg of sugar I asked the boss she said its too much and she uses 1 kg still a frigin lot.... Shocked

Carbonara

Boil spaghetti in a pot
When spaghetti is ready strain the water completely

In the mean time

1.      Cut bacon up into small pieces
2.      Place 50g butter in pan and lightly cook bacon
3.      Mince three gloves of garlic (peel them first) in separate container
4.      Cut some parsley into small pieces place in its own container
5.      Mix one egg with cream from a plastic bottle keep in mixing bowl
6.      Grate some parmesan cheese place in a  container
7.      Crumble some feta cheese place in a container

Then after the spaghetti has been strained place it back into pot with no water

Turn the fire back on and throw in the following while stirring & mixing through with wooden spoon,

a.      Egg & Cream
b.      Butter and bacon, should still be hot
c.      Garlic

Then serve on a plate and sprinkle the following on top

i.      Parsley
ii.      Parmesan cheese
iii.      Crumbled feta

Ready to serve, happy eating....... Cool

I made a pavlova the other day and then used the 4 leftover egg yolks for a carbonara the following night.  It was a super easy carbonara and totally delicious.

Skordalia "Garlic" Mash

Very potent garlic sauce made with mash potato and olive oil.

It's nothing like tsitsiki dip which is mild this is potent but delicious as an appetizer.

WARNING:
For all you oldies out there that might try it remember garlic drops the blood pressure, so if that happens eat a couple of oranges or drink orange juice and go straight to the doctor, just be careful if you have those problems.

Recipe:

Peel and steam 6 potatoes, we use the brushed potatoes.

When they are ready place in a bowl.

Use one garlic glove for every potato, if potato is bigger than a cricket ball then add extra garlic in proportion to one glove for a cricket ball sized potato.

Mash the potatoes and use a garlic press to mix in the garlic.

Then add the following

1. a flat tablespoon of armond meal

2. A flat tea spoon of salt

3. Squeeze a whole lemon

4. Olive oil - 150 to 200 millilitres, don't be shy this is what makes it.

5. Stir thoroughly until all ingredients mix well.

6. Sprinkle some pepper in and on top.

7. Place in fridge for a couple of hours and then serve.. Cool

Slot the meat in some places and place a glove of garlic in that slot while it cooks....... Wink

Boss just got home and said the following, probably too late but maybe for next time.

For 2 kilos of meat

1. Place meat in a tray that can hold water

2. Put 3 cups of water

3.  Put 1/2 cup of olive oil

4. Juice from a couple of lemons

5. 2 tablespoons of oregano

6. Sat and pepper

7. About 6 slots all over and insert cleaned garlic gloves in the slots

8. Place silver paper over roast/tray and cook for about 1-1/2 hours or test to your liking

9. Take tray out add potato and other vegies whatever you like

10. Cover with silver paper again put in oven and cook until vegies ready

Note you might have to add some more water like 1/2 a cup.

When you take it out sprinkle with olive oil and lemon juice then it's ready to serve.

By the thunderbolts of zeus mate, you’re not supposed to eat the garlic mash like normal potato mash FFS it’s more of an appetizer.

Boss is making it tonight.

It doesn't get the tender loving care it would on the week end cause everything is rushed.

I'm helping her cause she just got home from work.

She was still getting more water to put in the tray, she showered it with olive oil, oregano salt and garlic.

She then covered it with non stick baking paper and silver paper on top and then she slotted the silver paper and the paper.

will post when ready to eat...... Wink

OOPS I'm a silly duffa its non stick baking paper.

Boss pre boiled the potatoes and then she placed them in the tray with the meat and she grated some garlic over everything and then put some salt, pepper olive oil and rosemary.

Now it goes back in the oven until the potatoes are done.

The salad is ready but seasoning will go on just prior to eating, olive oil and salt.

Well that's me, I'm outta here....saliva is already running with the smell...... Cool

Awesome recipes Ajax thank you, but tell me?    How do you serve potato mash as an appetiser?   If you have it that way what do you serve it with?

I used to make a similar mash with grated cheese and a touch of cumin.  I would scoop out the flesh and make the mash then put it back into the potato skins and grill or bake it til the cheese melted. MMmmmmm.

Thanks for that but its the boss who has all the knowledge, I'll pass it on, I'm pretty hopeless in the kitchen and just a TA.

I cant say I've heard of cumin but it sounds delicious the way you make it.

As for the skordalia,

It can be served simple or with some effort,

Simple:

Could be dipping bread or savoy crackers or even celery, carrot, radish sticks etc. etc.

Some effort:

Make bruschetta with skordalia as base, cheese salami olives or whatever etc. etc.

OR

Leave out the ingredients for people to make their own hors d'oeuvres.

I am going to suggest an improvement. When I roast vegetables I roast a lot of garlic cloves by chopping the top of the bulb off, adding salt and olive oil and roasting it until soft and easy to squeeze out from the skin.
I am going to add a load of this to my mash, add olive oil and water so it's nice and soft and not quite runny. The starch of the spuds will be the vehicle for the roasted and caramelised garlic and oil and a rub of lemon skin and sprinkle of Romano cheese,  chives and parsley.

Am I going in the right direction or is this the way to perdition?
