Dunno about that, never deep fry anything, not in butter NOR lard nor nuffin' except the occasional schnitty in rice bran oil.  BUT.

For years I have been roasting potatoes and vegies with lashings of olive oil - until I discovered Smirnoff duck fat.

Really nice dinner.

Steamed pumpkin, mashed, a wee bit of pepper.
Nuked up old steamed veges from last night.
Fried Red Emperor Fish bought from local fish market today. Some lemon on the fish.

Had a big day here, a nice clean meal like that is perfect

Probably first time I’ve attempted it. Cooking it right now. That aroma of coconut smells so good!

Correction.
Since I saw this bit of advice, I only use ghee for pan frying fish.

Skin down, weight on, turn once at the end for one minute. Fabbo (if you like fish).
