I bought a couple of Lobster tails today and I am going to make Lobster Mornay.

Admittedly they are small but I am going to enjoy every last bite.

Sounds similar to our night tonight.  Quick and easy shepherds pie with broccoli on the side and followed by cheesecake.

last night I cut up and onion and lots of garlic, put a deep pan on as high heat as I could, added olive oil, rendered the onions down until they were just slightly burnt.
Then added a heap of finely sliced tomato, kept the heat on high to drive off the moisture and concentrate the flavours.
Added half a fine chopped capsicum
kept the heat on.
Then added some finely cubed eggplant so the concentrated tomato mix would be absorbed.
Chucked in some sliced mushroom.
Keeping the heat flat out, added cubed  green zucchini and bright yellow squash (I grew them from the job I just left)
Added garlic salt and garlic powder,,,lots of black pepper freshly ground
The finished product was pretty good, there was a little bit of thick moisture full of flavour, the zucchini and squash still had a tiny bit of crunch.

Mrs Trees also filled a container for lunch.

Tonight I am roasting a pork belly, with crackling.

Better use an oil with a higher smoke point than EVOO next time, mike.
