Actually, it wouldn't be much harder if a military simulation system is used, instead of a COTS video game console.  Troops regularly conduct field exercises with simulation systems which would be more than adequate to simulate target shooting in sporting events.

I fired weapons in the Army Cadets, and I grew up with a mate who had a farm in the wheat belt: we fired guns on his property quite often.

Of course it would.  The rifles would fire blanks and a laser beam would replace the bullet.  A series of sensors on and around the target would indicate where the aim went.   As I pointed out, soldiers exercise all the time with this sort of system, it senses "hits" and emits an audible tone when a hit occurs and the target is then declared "dead" until an umpire turns the alarm off.   Obviously the Biathlon competitors wouldn't need to wear the sensors, all they'd need was the "shooter".

Further, an Australian Company developed a shooting system which sensed fall of shot for small arms competitions over 30 years ago called DART (Direct Action Retaliatory Target).   This is in use by the Army on most of its SMR (Static Mechanical Ranges).   It displays on a VDU next to the firer where the shot has gone, into or by the target.
