I had dinner cooked for me last night so it probably would have been awesome whatever it was   Grin

It was ...

Monterey Chicken

Homemade chicken schnitzels
BBQ sauce (which I usually do not like at all)
Bacon
Cheese

Coat the schnitzels and cook them in a pan.  Lay them in a casserole dish or baking tray.  Top with some dollops of BBQ sauce, layer on some strips of (pre-cooked) bacon and sprinkle with cheese. 

Place in the oven until the cheese melts and serve with a green salad.

Anyone tried Kale in recipes, I heard something on the radio today about frying a bit of kale in olive oil with your steak.

Also can be cooked in the oven with a bit of OO for about 15mins to make kale chips as a snack

Easy Peasy Pavlova

4 egg whites
1 cup caster sugar
2 tablespoons of cornflour
2 teaspoons vinegar

Put egg whites into electric mixer and beat until soft peaks form.

Gradually add sugar (I just add it in a slow steady stream) until the meringue is thick and glossy and stiff peaks form.

Add the vinegar and cornflour and blend until just combined.

Put it on a tray lined with baking paper and shape with a spatula.

Warm oven to 150 degrees (but turn it down to 120 before you put the meringue in .. my oven is fan forced so I turn it down to 100) and cook for 1 hour and 20 minutes.  Turn oven off and leave the pavlova inside the oven until it cools.

Top with whipped cream and your choice of fruit.

my neighbour (retired chef) showed me a neat trick .. he rarely freezes meat although he's on his own and buys his meat in bulk

he slices his meat into thick portion sizes (usually scotch fillet), lays them side by side in a plastic tupperware container and then adds good quality (extra virgin) olive oil until it just covers the meat, adds sage, garlic  and rosemary. Then he stores them it in the fridge.

They keep like this for weeks and weeks .. when he wants to cook one, pulls it out drains oil and fries or BBQ's it ... it comes out so tender you could leave your dentures out and still have no trouble chewing it  .... and the flavour after weeks of marinading .. to die for

hint. .. you keep the oil in the container and reuse it the next time you buy meat ...

It sounds like a delicious way to store meat destined for the BBQ or a casserole.

I was sceptical myself, at first  ... until I tried the meat ... I've now tried it on 6 or 7 different occassions and it has never failed .

I usually watch BH & G but I hope the pavlova is Fast Ed's and not Karen Martinis. 

I love Ed's style of cooking but not so keen on Karen.

Earlier in the year I made my own brandy for Christmas but somewhere between then and now someone drank it   Angry

Rich Brandy Sauce

2 level tablespoons butter
2 level tablespoons flour
2 level tablespoons sugar
1 level tablespoon golden syrup
Pinch salt
1/2 pint milk
1/4 cup brandy
1/3 cup whipped cream

Melt butter, remove from heat and stir in flour.  Add sugar, golden syrup and salt.

Return to heat and add milk all at once stirring until sauce boils and thickens.  Cool slightly then add brandy and whipped cream.

Add more brandy if you wish but leave the sauce with a thick consistency.

Awesome, I am going to try slow cooking this year as in hotpots.

I have no experience but have a few recipe books I grabbed this year
that I haven't had time to play with.

I've seen a lot of pav recipes with a "pinch of salt" in them..

I find this to be a mistake on a molecular level and you are far better off without it..

I'd like to get my centres to stay a little higher.. the collapse when cooling to around an inch.  Undecided

Make sure all the sugar has been dissolved into the egg whites and when you have scooped the mixture onto the baking tray and made a round shape,  scrape the meringue upward all around the sides (making furrows) and a very slight dome.   That should help stop it from collapsing.

the mrs wants me to make the next one in a tin with a removable side to that it fits onto a plate properly for when we take it down to the xmas party ....
