I don't freeze my steaks ... I keep them covered in olive oil with garlic, sage and rosemary and I leave it in the fridge ... when i want some, no need to defrost or marinade, it's all ready for me. I haven't had a tough steak since I started doing it this way.


had the last of that batch of meat yesterday .. now aged about 3 months. Even though I overcooked it, it was so tender it still melted in my mouth

  The marinade will have little to do with wether its tough or not- that is all in the choosing of your steak prior. I was told how to get a tender steak every time- ( a butcher)- a simple test you can do.

Don't put sage and rosemary on your steak-  Cool Flavour should be added at the table or after the steak is cooked...that is for a simple pan fried. You can add a sauce or condiments after cooking.


it's not the marinade that makes it tender, it's  the fact that it's aged in oil and NEVER frozen. I only add the sage, rosemary and garlic so that it's ready to use at short notice. I don't need to marinade later.

ok- but I would never hinder the flavour of a good streak with anything via a marinade- but that is personal preference- I like my steak as is and only add anything after cooking- usualy just S and P and a good sauce- Dianne or what ever.

We're going to our local for dinner. It's not really our local local - just our favourite. It's trivia night and we haven't been in weeks because my husband has been on night duty, so tonight we will paint the town red with our interesting but correct answers.

And have a schnitzel.

wifey dearest is cooking tonight (now there's something you won't hear me say very often) I believe its salmon fillets with mashed spuds ... or at least it's supposed to be.  Cheesy Cheesy Cheesy

I used to love cooking, but for some reason lost interest- the quality of the dishes I produce have suffered as well- now I do simple, tasty and cheerful.

Spaghetti Bolognese with kangaroo mince. Yum and healthy. No hormones in kangaroo meat, very low fat.  Smiley
