Have:

1 grapefruit
2 mandarins
2 limes
1 lemon—maybe 2
1 tangelo
1 blood orange
1 navel orange

Big chunk of ginger to disguise any fault?  ;D

How much sugar??? Will have to weigh the trimmed fruit

Will it set? Will include 250g JamSetta sugar just in case.

Jam is jam - principle for making is the same.

should be able to use any marmalade jam recipe & adjust the quantities to suit.

Yeah, simplest is the recipe I have for Seville Orange marmalade, might reduce the sugar a tad.

Might also zest the lemons to give long thin strips of lemon peel instead of slivers of peel with lots of white pith. Same with grapefruit.

Mixed citrus plus ginger marmalade done.

Four small jars, four medium jars.

Small jars will head to Adelaide early December with small jars of 3 other marmalades—will also include other, commercial, Tasmanian produce. These will go to my sister, her daughter and her stepson. Stepson is into whiskey so I will send him a sample bottle of a Tassie whiskey as well. Her daughter is a chef—looking for some feedback.

B-i-l’s sister will get some soap/deodorant—like many older ladies, incl my fave aunt, she has weird dietary ideas. 2-3 nice photos of Tasmania will go to her as well. We met when I moved into one of the two flats attached to my sister and bil’s house—she loved Socks and so we got a bit closer to each other.

The hot marmalade—I could not detect much ginger, in a week or two will try some and see.


You have heard of the wrinkle test for set point (if not, look it up) but a better version is to draw a spoon through the little blob of jam on the chilled saucer—if the trail stays open the jam has set.

Had a look—marmalade cooled heaps, peels distributed throughout the jars: if jam is not set bits of fruit or peels settle out. So—all good so far.

Jam is set really well.
