But check out the brilliant ways they do it in that video.
They boil the water but at reduced air pressure
so it boils at a lower temperature to save on energy costs -
and then they recycle a lot of the heat to warm up new salt water.
It's ingenious.

One problem is to get rid of the brine -
concentrated salt water solution  -
when dumped back into the ocean causes marine life to die.
