The wattle seed is interesting. Grind up half a teaspoon or so, add to a mix for buns or muffins, be nice!

I have my spice rack here, need to demolish a stupid cupboard then can hang that on the wall. Hmmm I do have star anise and some other spices to add to the jars etc.

I will take a picture of the ends of the cinnamon sticks to show what real cinnamon looks like because if you actually buy cassia you will not get much flavor out of it at all


The little red jar on the right is vanilla bean paste.

The cupboard is one of the “rough” chipboard cupboards someone gave me. The teatowel makes it look a bit cleaner and nicer.

Two of my fave books for cooking with spices. I am looking for the third, Doris Ady “Curries from the Burra Bazaar” but seems it hasn’t been unpacked yet.

Will use this recipe for the rendang tomorrow:

1.5lbs beef — .68Kg blade steak

5tbsp oil—75ml

Spices:

Quote:
1 stick cinnamon about 2-inch length
3 cloves
3 star anise
3 cardamom pods
1 lemongrass cut into 4-inch length and pounded
1 cup thick coconut milk coconut cream
1 cup water
2 teaspoons tamarind pulp soaked in some warm water for the juice and discard the seeds
6 kaffir lime leaves very finely sliced
6 tablespoons kerisik toasted coconut
1 tablespoon sugar or palm sugar to taste
salt to taste


Hmmm no lemongrass—will have to grow some myself, likely in front porch because once that has a glass door it will be a little greenhouse almost. I grew lemongrass in Adelaide—this isn’t Adelaide!

Tamarind pulp—don’t have.  A little balsamic vinegar will do.

No kaffir lime leaves. No loss, will zest a lime or two. Will see if I have coconut milk. Also need to buy some dessicated coconut, toast that in the little frypan I use to toast whole spices.

Will bump the ingredients list up a bit to use up the kilogram blade steak sitting in the freezer. Take that out and let it thaw out.

Oh yes! Some rice and sir fry veges as well, a FEAST!

Hmmm tamarind pulp I will need to get, also Chinese pickled garlic for making Thai fish cakes, so two spices I forgot.

Going to make chickpea and chili curry to go with the beef rendang and a simple stir fry—some bok choy, snow peas, carrot etc.

Used the spice grinder that came with my Kenwood.

Ground coriander and cumin (separately) man what an amazing aroma from the fresh–ground spices, wow!

I left the spices a little bit coarse, didn’t grind them to dust.

Will do some more, make a fresh garam masala, oh yeah, aromatic!

Yeah, it's nice stuff.
