I've always struggled with this, and probably buy more knives than I sharpen. For my filleting knife I currently use a stone block with two different roughnesses on the two sides. It works OK, but seems to have been ground smooth.
What's the easiest way? |

A belt sander with a coarse belt works a treat.

Every method creates heat, Bobby. It's called friction. The trick is to do it lightly and slowly.

Professional knife sharpeners use a giant limestone wheel that is water cooled. Yes - anything else has to be done slowly so as not to create heat. That is difficult with an electric belt sander. - almost impossible. |

No not impossible, Bobby. I've done it many times. Quick, easy and gives you an edge with which you could split hairs.

But how long does it stay sharp - 5 minutes? Once you wreck the temper of the steel the knife is ruined. The best for fish is a soft steel knife & using a steel between each fish to put a fresh edge back on. |

I use one of these FD ... I used to struggle to get a nice edge with a stone, but since I got this it's as easy as. Quick to ... takes seconds to run your blade through before you use it, not that you should need to do it that often.

My boss uses an electric machine for our work knives. You just slide it through a couple of times and they come out scary sharp. One of us is always almost bleeding out.
Husband uses whetstone. He makes knives and enjoys the sharpening process. |

My old man was a butcher. Room with a massive whetstone. The butchers always followed up the whetstone with a steel for the finest edge.

OK - I know that product really works. However - you can also make the knife too sharp & it becomes ultra dangerous. It's not a knife you can leave in the dish rack with all the other dishes - the slightest touch will slice right through your finger! Beware. |
