Salads are one of my favourite foods.  I prefer my vegies raw or all heaped together in a soup.

This has been one of my favourites lately and I alternate the pears with strawberries.  Nice and healthy.



Handful of mixed leaves
Pear cut any which way you like
Handful of walnuts although I prefer the taste of pecans
Crumbled Feta

You can use a light balsamic dressing if you wish but I like it without any dressing at all.

interesting..

I'd use the mixed leaves... an Italian dressing... and bits of chicken mixed in...

maybe even some toasted bread cubes...

summer is coming on and so are the salads... :)

I was watching Good Cook Bad Cook on tv yesterday afternoon and they made this.  It looks delicious and I love turkey but chicken or any meat would work just as well.


Cobb Salad


Ingredients

½ cup cos lettuce, shaved
¼ of an avocado, sliced
100g of turkey breast, cut into strips
2 eggs, boiled and grated
2 tbsp. chives, finely chopped
8 – 10 perino tomatoes, halved

Dressing
1 clove of garlic, crushed
1 tsp. dijon mustard
2 tbsp. full fat yoghurt
½ lemon, juiced
4 tbsp. olive oil
pepper, to taste

Method

Season turkey with a little salt, pepper and olive oil. Heat a skillet to medium heat and cook the turkey breast for 2 minutes each side.

In a small bowl, combine dressing ingredients.

On a large platter, arrange rows of lettuce, tomatoes, avocado, chives, eggs and turkey. Serve with dressing.

I make salads as part of my job. Most days we do two. One is a chicken Caesar with cos lettuce, croutons, bacon, grilled chicken, egg, parmesan cheese and dressing. The other has gourmet lettuce, sundried tomato, red capsicum, red onion, egg, avocado, grilled chicken and whatever else I can find to throw in. It's dressed with an Asian dressing.

That first salad looks great, but I dislike walnuts so would need to substitute.

I prefer pecans to walnuts but if you don't like either I find almonds go well with just about anything.

I could live on salads.

I thought I was the only person on the planet who didn't like capsicum.  There are only 3 things that I cannot eat/drink.  Capsicum, peas and coffee.

most of the world's pecans come from the region where i currently live.  they used to be dirt cheap but the chinese have taken a like to them and have driven the prices sky-high.

I dont care for pecans.. but the trick with walnuts is to toast them first... even for a sticky date pud...always give them a quick toast only about 5 min makes a lot of difference.

I can't say I love capsicum either. I can take or leave peas. But coffee? I live for coffee. I sometimes take over the role of barista at work, but I'm not very good. The customers order a cap or latte etc, but it's the luck of the draw what they actually get. It's a bit of a joke with our staff and regulars.

I couldn't stand coffee until I started uni. Now I drink maybe 6 a day. And people wonder why I'm grumpy.

Years ago I could never even make a cup of coffee for visitors as I couldn't stand the smell.  We have a coffee machine now so whoever wants a cup can just make it themselves anyway.
