Cooked a camel fillet on Sunday in my offset smoker. Cooked it for longer than the wild boar ribs because it was much thicker than the ribs.
Sliced the fillet up yesterday—looked very pink, so I fried the slices with some onion & garlic. My meat thermometer does not mention “camel.” ;D ;D ;D Anybody know? |

They seem to target 72’C. - Rare
